Grilled Lemon Pepper Fish: Recipe

Easy and mouth watering healthy recipe.
Prep time: 10 mins
Cook time: 10 mins
Total time: 20 mins (10 mins if you already have cooked rice)
Servings: 1

Ingredients:
1 cup of brown rice
2 Filet of your favourite fish (I used Tilapia)
1/2 lemon
Salt and pepper to taste
Cucumber (cut your way; I cut it in quarters)
Tiny Tomatoes (cut your way; I cut in in halves)
Cilantro (optional garnish)
Directions:
Wash and cook brown rice. (I cook my rice on the stove top. 1 cup of rice and 1 cup of water, let it boil for 10 mins on high heat. Then turn off the stove, cover the pot and let sit on the warm stove)
Lightly marinate the fish by adding salt, pepper and squeezing lemon juice onto both sides of the fish.
Heat up Olive Oil in a pan on medium heat.
Add fish and cook each side until brown and crispy. Repeat for fish #2.
Plate the cucumbers and tomatoes (add salt and pepper to taste).
Add fish and rice to the plate.
Garnish with cilantro (optional).
And you are all done!!
Easy, simple and a healthy meal served in 10 minutes (if you already have cooked rice 😋)
